ABOUT THE FOUNDER
With nearly 30 years in the hospitality industry, Pablo Fernández-Valdés has worked with MHI Group, Grupo Tragaluz, W Hotel and SLOWNESS. Management of five Meliá properties globally & Managing Director at Grupo Tragaluz, overseeing 22 restaurants and Boutique Hotel OMM, which earned a Michelin star for ROCA Moo Restaurant. As COO of SLOW, supervised existing properties in Europe and Mexico. In 2013, founded Green Shoes Consulting, focusing on sustainable, holistic hospitality projects and gastronomic experiences.
